Aqua Restaurant Group, the Hong Kong based company with 23 restaurants across Hong Kong, Beijing and London will this July launch ‘Aqua Shard’, a new restaurant concept for the city, located in Europe’s tallest building.
The restaurant, located on level 31 of the building will bring inventive contemporary British cuisine to London’s new architectural icon – Renzo Piano’s The Shard. Yeo, owner of Aqua Restaurant Group, and executive chef Anthony Garlando, a protégé of master chef Pierre Gagnaire, have worked together to create the menu, which combines British ingredients sourced from carefully selected producers with Garlando’s innovative international cooking techniques.
The 220-cover aqua shard will be split into two areas, with all seats offering panoramic views over the Thames and London. One will be governed by the motif of gin and the other tea, commodities that are both inherent in the Capital’s social and commercial history. Aqua shard’s interior reflects the essence of modern London – contemporary and cosmopolitan but with classic British elements. Traditional British heritage design such as Liberty print banquettes will be carefully set against the sleek modern shell of the building.
The restaurant will be open all day, serving breakfast, lunch, afternoon tea and dinner. In addition, there will be a spectacular, three-storey high atrium bar, serving quintessential British cocktails with an emphasis on gin and tea that will link to another restaurant from the Group – Hutong on level 33.
